Opened in 1993, the West Indies International Bakery and Restaurant is owned and operated by Norma Stephenson, a native of Jamaica. In the early 1990s, the White Sox asked Stephenson to sell the spicy patties at Comiskey Park. But a rivalry with other park vendors and inadequate facilities ended her sales there. The relationship with Cano Publishing will help raise awareness and build capital for the bakery to expand its facilities and compete at a major league level. Stephenson's son Osezua, who works in the bakery, says We're understaffed but very efficient." He is optimistic about the bakery's chances to succeed at a major level.
