Beardsley, a popular and well-thought-of chef in Southern California, will join recently hired Restaurant Manager, Omar Haddad. The Chanteclair Restaurant is one of the most impressive restaurants in Orange County. It combines fine dining, impeccable service and nightly entertainment. Working to sustain that rare harmony will be the goal of the dynamic duo of Haddad and Beardsley. Most recently, Beardsley was the Fine Dining and Executive Sous Chef at the Laguna Cliffs Marriott. BeardsleyÂs efforts have resulted in numerous awards for restaurants under his supervision including the AAA Five Diamond Resort Award, National DiRona Award for Excellence and multiple Zagat Awards. He first came to serious food lovers' attention as a Chef at the Four Seasons in Carlsbad where he was responsible for most of the setup and organization of the restaurants prior to the hotelÂs grand opening. In the early 1990's, in Beardsley Âliterally earned his stripes as an Executive Chef for the Department of Defense. He was responsible for events and catering functions where attending members included the Secretary of Defense, the Commandant USMC, senior-ranking military officers, various civilian leaders and visiting foreign dignitaries. Chanteclair also welcomes Omar Haddad who brings over 30 years of experience, a degree in Hotel Operations Management from USC and training at the Cordon Bleu school in Paris, France, as the restaurantÂs new manager. Before coming to Chanteclair, Haddad was General Manger of McCormick and Schmicks Restaurant in Irvine. His strong culinary background, knowledge of wines, ability to speak fluent French has already made an immediate impact on the Chanteclair. The Chanteclair Restaurant is located at 18912 MacArthur Blvd, Irvine. The restaurant is open for lunch five days a week from 11:00 AM until 3:00 PM and dinner six nights a week from 5:00 PM to 10:00 PM Monday through Saturday.
