Cafe Ole Redefines Casual Mexican Dining with Fresh Dishes in Hacienda Settings

Cafe Ole Mexican Grill, a family-owned restaurant in Las Vegas, is getting ready to open its second location in the booming Southern Nevada market in September, 2005.

According to Vice President of Operations Ed OHerron, traditional Mexican dishes are punctuated with Cafe Oles signature flavors and fresh, hand-rolled corn and flour tortillas.

Were preparing classic dishes with top drawer ingredients and outstanding recipes. Slow-roasted shredded meats and hand made tortillas are Café Ole staples," he said. The centerpiece of each entrée is its shredded meat -- chicken breast, USDA top sirloin beef or marinated pork. OHerron said the shredded chicken burrito smothered in ranchero sauce is a top seller.

Chicken is this centurys meat of choice. The burrito, with its unique presentation of protein, starch and vegetables, is a sexy Mexican product," he said. While guests can choose from six core menu items with 45 variations, there are a few things that they wont find at Cafe Ole-freezers, microwaves and ground meat. What they will find is an ambiance reminiscent of a Mexican hacienda courtyard. Archways, subdued lighting and rich handmade furniture nestled against a muted backdrop of green, gold and buff welcome guests to the spacious dining area. Just out of sight sits the kitchen with its staff.

Brent Jensen, principal and vice president of development, said the decor is inspired by his minds snapshot of Mexico. Its a destination he frequented during his 25 years as a travel industry professional.

Café Oles design is the product of the mental photograph I took of Mexico. I saw rich, warm colors along with great lighting, old-home furniture and amazing tile work," he said. The dining room resembles the outside room of an old hacienda with workers busily preparing amazing food back in the kitchen." OHerron added, The beauty represents the rich cultural heritage of Mexico."

After meandering past chairs and the condiment station -- handmade products from Juarez, Mexico -- guests begin the Cafe Ole culinary experience with a glimpse of the handmade tortillas, rotating to doneness. Guests place their orders and view assembly of the made-to-order dishes, which include sauces and salsas of their choosing. At the core of the condiments are fresh and dried peppers -- anchos, guajillos, serranos and green chilis. The Cafe Ole chili meter assigns mild to hot ratings. OHerron said that the hottest chili varieties are used sparingly.

We love the taste of our food and want people to enjoy that," he said. So much care and effort goes into each meal and we dont want to set patrons mouths on fire. Bottled commercial hot sauce is available if they want to kick it up a notch."
