When asked what “Booozah” is, Karim Raad has a quick reply, “It is the new thing in the ice cream business,” Raad is the owner of Booozah LLC, a one-year-old company that took Italian Gelato recipes as well as Middle Eastern Ice Cream recipes and created a new line of Gelato called “Booozah – a Gelato with a Twist.”

“Basically we have taken the best characteristics of Italian Gelato, like using real fruit in the Sorbetto or water based flavors, much less butter fat content in the milk based flavors by using 2% milk and most importantly less overrun. In addition, we added many ingredients used in Mediterranean ice creams, like Rose Water, Orange Blossom Water, Greek Mastic Gum and a key ingredient called Sahlab, which in its natural form comes from Orchid Tubers.”

Booozah, which actually means “ICE CREAM” in the Arabic language, currently offers 11 flavors ranging from Exotic Mango, Wild Blackberry, Zesty Lemon to Nutty Chocolate, Pistachio Delight and White Orchid Supreme. “We have some very intense fruit flavors, made with real fruit, we do not add any coloring or additives, also we have some unique flavors like White Orchid Supreme, which is a “Crème Fraiche” like flavor that is very smooth and rich, but without the calories that you usually have in regular ice cream,” said Raad. “We also have the Greek Chios Mastic flavor that is made with Chios Mastic Gum from Greece. This is a very unique flavor and probably an acquired taste one. But just so you know, Mastic Gum is well documented to actually help stomach Ulcers, so maybe Booozah will not only be a great dessert, but also have some kind of health benefits.”

When asked what would be the biggest difference between Booozah and other ice creams on the market today, Raad says, “There are really many difference and according to the FDA we cannot even call Booozah an Ice Cream. Ice Cream have between 18% and 24% butter fat, and Booozah is below 10%, but if I was to pick one single most important difference, it would be the Overrun, or “air” put into the ice cream. I find it fascinating that most people do not know that some ice creams on the market are based on 80% to 110% overrun. My rule of thumb, the cheapest the ice cream the more over run it has,” Raad continued. “Booozah has between 25% to 35% overrun and this is very important to the quality of the product, its intensity, structure, and most importantly its price.”

Booozah is currently sold in many Whole Foods Stores around Massachusetts, Rhode Island and Connecticut. “ We hope that consumers will pick up on the quality and intense flavors and make Booozah one of their preferred Frozen treats. We also hope we will soon be able to reach a healthy and value conscious consumer nation wide,” Raad concludes.
