Chef signs to write cookbook for men

Chef to Write Cookbook for Men
January 17, 2002 -- Grendel Press, a publisher of cooking and other trade books, has signed Rancho Mirage, Calif., chef Scott Avery to pen the new cookbook for men, A Mans Place IS in the Kitchen."
This cookbook is designed specifically for men who dont or cant cook and the women who love them," says Sally Slack, publisher. So many cookbooks available today speak to people who already know how to cook. This one is different. Its being written for men who just need to know what to expect in the kitchen. They want to cook a great meal but they also need to know the difference between a sauce pan and a pot, and when to use each one."
Men wear numerous hats today in addition to climbing the career ladder, says Slack. Single men often have children to cook for, for example, instead of hitting the bars every night. Other many men find they rely a little too heavily on their wives in the kitchen. Even those who have never married or dont have children often find themselves stumped when performing kitchen tasks they usually have little experience with.
Author Avery says A Mans Place is in the Kitchen" will be a classic guide for men who want or need to cook but dont know where to start. Men dont cook for two reasons," says Avery. Either they have never been taught how or, when they did venture into the kitchen, it was such a disaster that theyve avoided that area of the house ever since."
Avery believes that men, however, shouldnt be relegated to serving chili dogs. Teach them about the fun they can have in the kitchen!" he says. The cookbook will provide clear explanations but challenge men to stretch with meals that arent typically found in the average bachelor pad.

GUACAMOLE
4 avocados, halved lengthwise
2 tablespoons onion, minced
1 clove garlic, minced
2 tablespoons lemon juice
1 tablespoon virgin olive oil
1/4 cup mayonnaise
Salt to taste
Dash red pepper
Remove pits from halved avocados and scoop avocado meat into a bowl. Use a fork to mash the avocado. Blend all the other ingredients well with the avocado; cover and chill for at least an hour before serving. Serve with warm tortilla chips at a cocktail party or as a starter before dinner.
Yield: 2 pints dip.
HAM SALAD
2 cups lean cooked ham, ground or minced
1/8 cup fresh parsley, finely chopped
¼ onion, diced
Salt to taste
Black pepper to taste
1 tablespoons pickle relish
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
Place ham, parsley, onion, salt and pepper in medium-size mixing bowl; toss to mix. Add relish, mayonnaise and mustard; mix well and chill. Wonderful served on rye toast with leaf lettuce, or as a salad scooped into fresh tomato cups.
