STARCH: A Little Bit Goes a Long Way"

Rumson, New Jersey - October 5, 2002 - Starches are a major ingredient in almost all types of food. Their selection is often a daunting task for manufacturers involved in the new product development process. The right starch influences not only the texture, crispiness, and appearance, but also the stability of foods ranging from meat and fish products to baked goods and dairy items, sauces and salad dressings. Ultimately, the manufacturers costs, quality, and competitive edge can be attributed to the choice of starch.

On Friday, November 1, 2002, from 9:00 a.m. to 11:00 a.m., the New Jersey Small Business Food Alliance will present "Starch: A Little Bit Goes a Long Way." Valerie Jezequel of National Starch and Chemical Company will discuss the essentials of starch selection and usage in a variety of food applications. National Starch and Chemical Company is a Bridgewater-based company and global leader in the manufacture of specialty food starches. The two-hour presentation will be held at the Center for Advanced Food Technology (CAFT), 120 New England Avenue, Piscataway, NJ.
