Delicious Dishes Developed by Celebrity Chef Caprial Pence

Selah, Wash.--November 12, 2002 -- Tree Top, Inc. and cookbook author Caprial Pence are celebrating the holiday season with five innovative wintertime recipes featuring apple juice and apple cider.
Located in the heart of Washingtons apple country, Tree Top is focused on making apple juice and sauce that celebrate the authenticity and purity of its homegrown apples. When consumer research showed that adults enjoyed rediscovering the fresh comforting taste of apple juice, they sought a chef to develop recipes that would accentuate the great apple taste of Tree Top products and showcase its versatility.
After researching a number of potential chefs, Tree Top found Caprial Pence to be an ideal selection for this project. She and her husband John were just finishing a cookbook and kicking off a new PBS TV Show -- Cooking with Caprial & John -- based on the premise that its important to cook with the best, freshest regional ingredients available.

Using apple juice in a variety of fabulous drinks and flavorful dishes designed to appeal to a wide range of consumers, these recipes demonstrate just how versatile high quality apple juice can be."
In addition to the beverage described below, the chefs also created four other recipes (available by request) that are sure to please: Hot Apple Cinnamon Fluffs (a kids drink), Caramelized Onion-Apple Chutney, Apple Ginger Sabayon (a unique dessert) and Roast Pork with Apple Juice Honey Mustard Glaze.
Hot Apple Decadence
Beverage - Serves 4
Developed by Caprial and John Pence for Tree Top® Inc.

This yummy drink will warm you and your guests on a cold winter night. Its so quick and simple to prepare that its good anytime -- from your busiest holiday evenings to those slow Sunday afternoons. Caprial and John suggest serving this drink during holiday decorating as well as throughout the winter.

46 oz. Tree Top® Three Apple Blend apple juice
4 cinnamon sticks
8 oz. Tuaca Italian liqueur
4 oz. Frangelico hazelnut liqueur
¼ teaspoon nutmeg
4 oz. whipping cream

Pour apple juice into a medium size saucepan with cinnamon sticks and simmer slowly for 1 minute. Turn off heat and allow the apple juice and cinnamon sticks to steep for 8 minutes. Bring mixture to a boil. Turn off heat and add the Tuaca, Frangelico and nutmeg. Pour mixture into 4 wine glasses. Add a cinnamon stick to each glass and finish with a dollop of whipped cream.

Note: Tuaca and Frangelico liqueurs can be found in the cordials section of liquor and grocery stores. Ground cinnamon can be substituted for cinnamon sticks. You can omit the Tuaca or replace it with a small amount of vanilla extract, but for optimal taste we recommend including the Tuaca.
