One Valentines Day recipe in "The Family Table" is rack of lamb. Rack of lamb is one of my favorite selections to serve my husband, Randy, on Valentines Day," says Christy Rost. Light the hearth while the lamb roasts in the oven, then enjoy a table for two, in front of the fire, in the most romantic restaurant in town -- your home. Its a match made in heaven."

Rack of Lamb Dijon
Ingredients:

3   pounds trimmed rack of lamb
1   teaspoon coarse salt
½   teaspoon freshly ground black pepper
3    tablespoons Maille or other good brand
        Dijon mustard
3   tablespoons chopped fresh rosemary
3   tablespoons chopped fresh sage
2   tablespoons chopped fresh parsley
3   cloves minced garlic
½   cup bread crumbs
   Mint jelly, for garnish

Ask the butcher to trim and french" the racks.

Preheat oven to 450 degrees. Season both sides of lamb with salt and pepper and roast it in a preheated oven approximately 15 minutes until rare.

While lamb is roasting, stir together the herbs and garlic. Remove lamb from oven and brush it liberally with mustard until well-coated. Press herb and garlic mixture onto lamb and sprinkle with bread crumbs. Return lamb, herb side up, to roasting pan.

Cook lamb 20 to 25 minutes more, depending on thickness, until lamb is done and herbed crust is brown. Remove meat from oven and set aside 5 minutes to rest.

Carve between ribs. Arrange 3 chops on each dinner plate and serve with mint jelly, if desired.

Recipe serves 8.

Within each section, recipes are grouped by type (salads, entrees, side dishes, etc.) Also included are wine suggestions with many of the entrée recipes. Erics Wine Notes," written by a wine expert, contain three wine suggestions in order of least to most expensive.

Christy Rosts culinary career began in early 1992 when she was asked to serve as the food editor for The Park Cities News in Dallas, Texas, a position she still holds. What followed was an outpouring of support and requests. Since then she has hosted cooking seminars with Macys, held cooking classes for Sur La Table, hosted her own television cooking show, Just Like Home," appeared on several other television cooking shows, including At Home Live," and launched a successful culinary career. Christy is a member of the International Association of Culinary Professionals. She can be heard on the radio every Sunday on KRLDs The Restaurant Show with Jim White." Christy takes classical voice lessons and often sings during her cooking classes. She lives with her husband and two sons in Dallas, Texas.
