Chef Aubriot is well known among the culinary crowd, having worked in some of Chicagos finest restaurants (Carlos, Trio) as well as in Europe under the tutelage of iconic chefs such as Alain Ducasse and Michel Guerard. He opened his namesake restaurant, Aubriot in 1998 to critical acclaim. He has been nominated twice for the esteemed James Beard Foundation Rising Star Chef" award.
The menu at Fuse is simple in presentation, echoing the Chefs belief in letting the flavors speak for themselves. Chilled appetizers feature Poached Pear and Muenster Salad, with figs, port reduction and a fresh herb garnish; Cold Prince Edward Island Mussel Veloute, with saffron and crème fraiche; and Yellow and Red Beet Carpaccio with frisee, mache, orange supremes, chives and truffle vinaigrette. Hot appetizers include Poached Green Asparagus, with fresh herbs and a morel-bone marrow cream sauce; Seared Yellow Fin Tuna with olive tapenade, arugula, celery juice and haricots vert; and Seared Foie Gras with Bittersweet Chocolate Sauce (Aubriots signature dish).
Entrees are equally tempting, featuring dishes that will warm you on a chilly winters evening. The menu includes Oven-Roasted Lamb Loin, with eggplant caviar, oven-dried tomato, and a garlic-lamb jus; Provençal-style Seafood Stew en cocotte;" Roasted Black Cod, with poached egg, black olive, truffles, and zucchini puree; and Braised Short Ribs, parsnip puree, glazed Brussels sprouts and braising liquid.
