Maui-Mex Cookbook Reveals Recipes from the Maui Tacos Menu

It started as a tiny restaurant on Maui frequented by surfers, locals and tourists. Now Maui Tacos, the Hawaiian surf shack themed restaurant chain, is boldly spreading its Maui-Mex cuisine across America with an easy-to-use cookbook and in lots of far-from-the-ocean locations.

The Maui Tacos concept was originated by Mark Ellman, a celebrity chef in Hawaii. Ellman secretly craved simple Mexican food even as he created spectacular Pacific Rim recipes at his trendy Avalon Restaurant. Ellman opened the first Maui Tacos in 1993 on Maui. There are now seven Maui Tacos in Hawaii where real surfers provide the ambiance at the restaurants. On the mainland, diners can enjoy Surf Burritos and Hola Aloha Salsa surrounded by nostalgic surf memorabilia. Maui Tacos will open the first West Coast location in Gilroy, California in late April, 2004. The new location fills a geographical gap between the original Hawaiian island restaurants and East Coast locations dotting the country from New York to Alabama. The next Maui Tacos is scheduled to open in Hayward, California later this year.
