The Maui Tacos concept was originated by Mark Ellman, a celebrity chef in Hawaii. Ellman secretly craved simple Mexican food even as he created spectacular Pacific Rim recipes at his trendy Avalon Restaurant. Ellman opened the first Maui Tacos in 1993 on Maui. There are now seven Maui Tacos in Hawaii where real surfers provide the ambiance at the restaurants.
