The owner of an ice cream shop learns he is diabetic and wants to find an ice cream substitute -- he ends up creating a low-fat, low-carb, low-lactate, sugar-free drink that fits the needs of every diet.

Doc Helli, of Aberdeen, NC, was living his dream. He was such a fan of sweets that he opened his own ice cream store, Ice Rage Caffe, inside a local Walmart. Then he learned that he was diabetic.

”I loved ice cream and I didn’t want to give it up,” said Helli. “So I started looking for a replacement, but nothing did the trick. At that point, I was determined to create an option for people –- not just for diabetics, but for people on just about any kind of diet.”

Helli’s solution was unlike anything on the market. He developed a low-fat, low-carb, low-lactate, sugar-free drink called the Carolina 7 Smoothie –- in short, something that covered the gamut of modern dietary demands, including those of diabetics.

“As a diabetic, I needed something without sugar, so I used Splenda® instead. Locally, Helli’s drink has become something of a sensation because it’s one of the few products that really does meet dietary needs ... and the need for something that tastes good.
