(PRWEB) September 28, 2004 -- Its 10 years ago this week that Coopers opened its doors on Leeson Street in the heart of Dublin. Located just off Leeson Street Bridge Coopers has gone from strength to strength seeing big changes in the Restaurant business in Dublin over the years. Established by Peter Stokes in 1994 Coopers brought a new style of Restaurant and a fresh approach to food and service to Dublin. Originally an old Coachhouse the building was bought in the 1950s by P.V. Doyle of the Doyle Hotel Group and converted into their headquarters at the time. Leeson Street was the centre of Dublins nightlife from the 70s right up to around the time Coopers opened its doors. Due to a larger variety of venues in the city the streets clubs have seen a decline of late. Over the last two years Coopers has been taken over by new Management comprising of Head Chef Noel Daly, Restaurant Manager Dee Mc Mahon and Financial Controller Maria Fox. Noel upon finishing his culinary degree in the late 80's Noel started his career in some of Dublin's best French restaurants; La Pigalle, Casa Blanca & O'Casey's to name but a few. Taking time out Noel travelled the continent extensively learning new culinary techniques and methods. When Peter Stokes, decided in 1994 to open his newest venture, Coopers in Leeson Street, Noel was his obvious choice of chef to bring this restaurant to the forefront of Dublin dining.
Since then Noel has helped set up and develop other culinary projects with Peter notably Castle Durrow in Co. Laois, the epitome of luxurious dining. Dee Mc Mahon starting her career in the esteemed Dublin restaurant FXB's, Dee found her niche in restaurant management. She remained there for many years gaining experience in all aspects of the hospitality industry.
In 1994 she was head hunted by Peter Stokes to set up and manage his latest venture Coopers Leeson Street. It was here she met Noel Daly and the two made a dynamic team. Dee then took the role of area manager of Coopers Leeson Street, Coopers Ballsbridge and Castle Durrow. She did this with utmost professionalism. Conscientious to a fault, Dee is arguably one of the most pleasant and dedicated woman in her field.
It was no surprise then when Peter Stokes, after selling Coopers Ballsbridge, offered Coopers Lesson Street to his loyal and respected team. That team being Noel Daly, Dee Mc Mahon and Maria Fox, the latter his financial controller of more than 10 years. The three knowing they could take Coopers Leeson Street to another dimension readily agreed, and the rest as they say, is history!
