Celiac disease is a chronic, autoimmune disorder. In genetically susceptible individuals with HLA-alleles DQ2 and or/DQ8, ingestion of gluten-containing grains, especially wheat, causes inflammation of the small intestine mucosa and leads to malabsorption. Long believed to be a rare gastrointestinal disorder, celiac disease is now known to be one of the most common, under-diagnosed diseases with a wide range of gastrointestinal or non-gastrointestinal symptoms. Although silent celiac disease may lack overt clinical symptoms, damage to the gut mucosa may nevertheless be occurring. Recent studies have shown that celiac disease affects 1:100 individuals in European and North American populations.

Due to the extremely variable presentation of disease symptoms and severity, diagnosing celiac disease is difficult.
