Seasonal treats -- from Croquembûche to Wild Mushroom Stew and Braised Rabbit

(PRWEB) December 7, 2004 -- Papa Haydn and Job Bar, culinary veterans of Portlands dining scene, introduce new winter menus and a holiday dessert list filled with seasonal favorites. Celebrating 26 years in Portland, Papa Haydn is offering, for the month of December, a special prix fixe anniversary dinner for $26.

Papa Haydns Holiday Treats to Order:
The pastry chefs at Papa Haydn create magic for the holidays with an assortment of holiday desserts and a Christmas Croquembûche", an elaborate dessert made with vanilla and/or chocolate macaroons stacked into a tall pyramid shape on top of a Chocolate Souffle Cake. All desserts are available to order and to enjoy at the restaurants.

• Cookie Boxes filled with macaroons and orange-ginger sables

Jo Bar:
Partner Michael Gibbons, along with Executive Chef Haktor Fleming, have designed a menu to reflect seasonal ingredients in the Pacific NW. Nightly rotisserie specials, cooked over Hood River apple and pear wood, feature: Painted Hills Prime Rib, Free Range Veal Strip Loin Roast, and Osso Bucco, Willamette Valley Saddle of Lamb, Venison, Rabbit, and Painted Hills New York Strip Loin. Our regular menu features a vegetarian Wild Mushroom Stew, Beet and Goat Cheese Terrine and Line-Caught Wild Salmon.

Papa Haydn:
Some new winter items to look for at the two Papa Haydn locations include: Pan Roasted Local Organic Breast of Chicken served over house made Hazelnut Spaetzle with braised Rainbow Chard; Alaskan Spot Prawn, wild prawns sautéed and over an oven-dried Tomato Risotto with Basil and preserved Lemon; and Pappardelle Pasta tossed with Organic Chicken, Morel Mushrooms & a Fennel-infused cream sauce.
