Pink Baked Oranges Angeles
8 large oranges
2 teaspoons sugar
6 teaspoons strawberry all-fruit preserve
4 teaspoons reduced fat margarine
4 teaspoons orange zest
1-teaspoon ground cloves
Preheat oven to 350ºF.
In a large nonstick saucepan filled with water to cover, boil the oranges for 30 minutes. Drain and cool. Cut off a small circular slice at the bottom of each orange and remove the core. In a bowl mix together the sugar, margarine, strawberry preserves, orange zest and cloves. Divide the sugar and strawberry mixture equally among the oranges placing it in the center of each orange. Place the oranges in a nonstick baking dish, lightly sprayed with cooking spray and filled ½ full with water. Bake for 2 hours, replenishing the water as needed. Garnish with fresh sliced strawberries. Makes 8 servings.
Red Berry Breakfast Banana Split
1 banana, peeled & split
1-cup raspberries or strawberries
1 big scoop nonfat frozen yogurt or ice cream
Arrange banana on a plate. Top with yogurt and fruit. Makes one serving.
