Announcing the new Chef at the recently re-furbished Galisteo Inn and La Mancha bar and restaurant in Santa Fe County, New Mexico. Enrique Guerrero is the new chef at La Mancha and has coined the term "Nuevo Hacienda Cuisine" to describe his cooking.

Born in northern California and raised in Mexico, Guerrero spent his childhood on his family ranch where everything was grown on the farm. He remembers watching his great-grandmother preparing the chicken with mole for the entire family. Later he moved to the Bay Area and started like most great chefs, washing dishes in a South San Francisco restaurant. There, the chef taught Enrique about cooking and suggested that he follow a formal career at the Culinary Institute.

Enrique has worked for some of the best on the line, including: Julian Serrano [Masa's], Michael Chiarello [Tra Vigna] Thomas Keller [The French Laundry] and Robert del Grande [Cafe Annie, Houston]. Next Guerrero served as personal chef to The President of Mexico for four years. As his style and passion developed, he returned to the US and moved to New Mexico where he was the Executive Chef at Scalo. During this time, Scalo was known as "the best Italian restaurant in NM."

Next he was Executive chef at La Casa Sena, one of the finest restaurants in Santa Fe, and he began teaching culinary arts at the Santa Fe Community Collage. He continues to give classes at Santa Fe School of Cooking, where he is famous for his "Chili Class."

Guerrero loves being a Chef! He bases all his work, success and creativity on his respect for and love of food. Guerrero speaks with passion about all aspects of his career. He states: "You have to cook from the heart."

Guerrero uses rustic touches to uniquely blend Mexican, Spanish and French flavors. He combines fresh seasonal ingredients such as olives, chilies, huitlacoche, black truffles, figs, apricots and foie gras to create a palette of mouth-watering tastes.
