The March/April issue of SheKnows Cooking Smart magazine will hit the newsstands February 7 with more than 40 new tasty, healthy recipes. Most of the recipes fall into one of five categories (low fat, low calorie, low sodium, vegetarian and low carb), so the health-conscious can find plenty of recipes to fit their dietary needs. And because people sometimes want to splurge, there are a few recipes that will indulge the senses.

One mouth-watering recipe is a Simple Spring Salad with Vanilla Vinaigrette, which was created specifically for Cooking Smart by author and personal chef Michelle Thompson, M.S.

Simple Spring Salad with Vanilla Vinaigrette


2 tablespoons white wine vinegar

2 teaspoons Dijon mustard

1/2 teaspoon Tahitian vanilla extract

1 tablespoon minced chives or green onion

3 tablespoons extra virgin olive oil

Pinch of salt

Fresh ground black pepper to taste


6 cups spring mix greens

1/2 cup chopped green onions (green and white parts)

1 cup sliced fresh strawberries or peaches

1/2 cup sliced almonds, toasted*


Whisk together vinaigrette ingredients and transfer to cruet. Set aside. Place greens in large bowl and drizzle with 2 tablespoons vinaigrette. Divide among four salad plates and sprinkle with green onions. Mound strawberries or peaches in center of greens and sprinkle with toasted almonds. Drizzle each salad with 1 teaspoon of vinaigrette and serve immediately. Set cruet of vinaigrette on table for extra

drizzling, if desired.

*Toast sliced almonds in dry skillet over medium-high heat, stirring often, until golden and fragrant, 3 to 4 minutes. Remove from heat immediately to avoid scorching. Let cool.

4 servings. Per serving: 243 calories; 186 calories from fat; 21g fat; 4g saturated fat; 8mg cholesterol; 10g carbs; 4g fiber; 6g protein; 194mg sodium; 134mg calcium; 1mg iron
