The March/April issue of SheKnows Cooking Smart magazine will hit the newsstands February 7 with more than 40 new tasty, healthy recipes. Most of the recipes fall into one of five categories (low fat, low calorie, low sodium, vegetarian and low carb), so the health-conscious can find plenty of recipes to fit their dietary needs. And because people sometimes want to splurge, there are a few recipes that will indulge the senses.
One mouth-watering recipe is a Simple Spring Salad with Vanilla Vinaigrette, which was created specifically for Cooking Smart by author and personal chef Michelle Thompson, M.S.
Simple Spring Salad with Vanilla Vinaigrette
FOR THE VINAIGRETTE:
2 tablespoons white wine vinegar
2 teaspoons Dijon mustard
1/2 teaspoon Tahitian vanilla extract
1 tablespoon minced chives or green onion
3 tablespoons extra virgin olive oil
Pinch of salt
Fresh ground black pepper to taste
FOR THE SALAD:
6 cups spring mix greens
1/2 cup chopped green onions (green and white parts)
1 cup sliced fresh strawberries or peaches
1/2 cup sliced almonds, toasted*
Whisk together vinaigrette ingredients and transfer to cruet. Set aside. Place greens in large bowl and drizzle with 2 tablespoons vinaigrette. Divide among four salad plates and sprinkle with green onions. Mound strawberries or peaches in center of greens and sprinkle with toasted almonds. Drizzle each salad with 1 teaspoon of vinaigrette and serve immediately. Set cruet of vinaigrette on table for extra
drizzling, if desired.
*Toast sliced almonds in dry skillet over medium-high heat, stirring often, until golden and fragrant, 3 to 4 minutes. Remove from heat immediately to avoid scorching. Let cool.

What is SheKnows?
Put simply, SheKnows is an information resource for women. Of the 293 million people in the U.S., over half are women. We know women are making more and more of the decisions for their households and families — not just about buying food, clothing, insurance and automobiles, but also daily living issues like having children, parenting, health and wellness and so much more.
We also know that women value relationships — with family and friends as well as with the companies they do business with — above all other things, and that these tend to be primary sources of information for them.
So whether you need information on child-raising, pregnancy, cooking smart, finances or fitness, SheKnows wants to be there to help — to develop a relationship with you as a one-stop place to find the information you need!
Sheknows provides the following resources on the Internet.
Our network also extends to three colorful and dynamic magazines — SheKnows Cooking Smart, SheKnows LowCarb Energy and SheKnows Diet & Fitness. These are available in bookstores, newsstands, grocers and drugstores across America. Our magazines provide healthy recipes, information on food trends, fitness and beauty — much of what you need to eat smart and stay healthy.
