Beefy Pepperpot Soup
Use red, yellow and green peppers in this spicy, eye-catching soup. You can serve this with a dollop of sour cream.
3 tablespoons extra-virgin olive oil
1 cup finely diced onion
1-1/2 pounds extra lean ground beef
4 cups beef or chicken stock
1 14-ounce can diced tomatoes
1/4 teaspoon dried thyme
1 pound mixed bell peppers, seeded and chopped, approximately 3 cups
1 jalapeno pepper, finely chopped
2 cups finely chopped green cabbage
1/2 teaspoon freshly ground black pepper
1. Heat oil in large pot over medium heat. Add onion and cook until soft but not browned.
2. Add beef and cook, crumbling it with spoon until it loses its raw color and starts to brown.
3. Add stock, tomatoes and thyme. Bring to boil and add peppers and cabbage.
4. Partially cover with lid and turn down to simmer. Continue cooking for 40 minutes.
5. Thin with water if soup seems too thick. Add black pepper and season to taste. Makes approximately eight cups.
