Slim Down for Summer with Five Super Soups

This time of year, many people start to wonder if last year’s swimsuit will fit, or if the new swim fashions will look good on them this summer. For many, the answer may be that they need to drop a few pounds. And that means dieting.

Low carbohydrate and healthy carbohydrate diets are some of the most popular around and include such well-known names as the Atkins Diet, the South Beach Diet, Carbohydrate Addict Diet and The Zone Diet. For the most part, all these programs encourage people to eat foods lower in carbs. High carbohydrate foods turn into sugar in the body, which the body either burns or stores as fat. Too many carbs, too much sugar and boom, on pour the pounds.

Beefy Pepperpot Soup

Use red, yellow and green peppers in this spicy, eye-catching soup. You can serve this with a dollop of sour cream.

Ingredients:

3     tablespoons extra-virgin olive oil

1     cup finely diced onion

1-1/2     pounds extra lean ground beef

4     cups beef or chicken stock

1     14-ounce can diced tomatoes

1/4     teaspoon dried thyme

1     pound mixed bell peppers, seeded and chopped, approximately 3 cups

1     jalapeno pepper, finely chopped

2     cups finely chopped green cabbage

1/2     teaspoon freshly ground black pepper

    Sea salt

Directions:

1.    Heat oil in large pot over medium heat. Add onion and cook until soft but not browned.

2.    Add beef and cook, crumbling it with spoon until it loses its raw color and starts to brown.

3.    Add stock, tomatoes and thyme. Bring to boil and add peppers and cabbage.

4.    Partially cover with lid and turn down to simmer. Continue cooking for 40 minutes.

5.    Thin with water if soup seems too thick. Add black pepper and season to taste. Makes approximately eight cups.
