Here’s a tasty low-calorie, low-fat treat from freelance writer Joan Russell to help you slim down for summer:

Apple Gorgonzola Pecan Salad

Salad ingredients

1 head red leaf lettuce, shredded into bite-size pieces

1 Granny Smith apple cored, seeds removed, cut into thin slices

1 MacIntosh or Braeburn apple cored, seeds removed, cut into thin slices

1 Golden Delicious apple cored, seeds removed, cut into thin slices

1/2 cup crumbled Gorgonzola cheese

1/2 cup chopped pecans

1/4 cup chopped green scallions

Dressing ingredients:

1/2 cup olive oil

1/4 cup apple cider vinegar or apple juice

1 clove garlic, crushed through press

1/2 teaspoon Dijon mustard

Salt and pepper to taste


1.    Wash and cut lettuce; discard core. Cut into bite-size pieces and put in medium bowl.

2.    Wash core and cut apples into thin slices and mix with lettuce.

3.    Add crumbled Gorgonzola cheese, chopped pecans and green scallions to lettuce and apple mixture. Toss ingredients to distribute evenly. Cover and chill in refrigerator an hour or more.

4.    Mix oil and apple cider vinegar in small jar or measuring cup with crushed garlic, Dijon mustard, salt and pepper to taste. Whisk or stir well.

5.    Serve salad on individual plates or in bowl and pour dressing over each portion individually.

6.    Do not mix with entire salad. It will keep longer this way.

SERVES 6. PER SERVING: 310 calories; 249 calories from fat; 28g fat; 5g saturated fat; 8mg cholesterol;

14g carbs; 3g fiber; 4g protein; 147mg sodium; 82mg calcium; 1mg iron
