ImTypeFree Recipe Contest Winner Caters to Diabetic Needs at Every Meal

Richmond, VA (PRWEB) June 26, 2007 -- ImTypeFree (www.ImTypeFree.com) announces that Hyacinth Brown is this year's 3rd place winner of the ImTypeFree Diabetes Recipe Contest. Her winning diabetic friendly recipe for "Casserole Bread" caters to the needs of friends and family battling diabetes whenever she has a gathering.
Bread Casserole Recipe:
1 1/2 cups white flour
1 cup wheat flour
2 tablespoons sugar
1 teaspoon garlic salt
1 teaspoon dried basil
1/4 teaspoon baking soda
1 envelope active dry yeast(instant can be used)
1 cup small curd cottage cheese
1/4 cup water
1 tablespoon olive oil
1 large egg
1/2 cup shredded parmesan cheese
Combine 1 cup of flour, sugar, garlic salt, basil baking soda and yeast in a large bowl and mix well. Combine cottage cheese, water and olive oil in a small saucepan. Heat over medium heat until very warm.
Add cottage cheese mixture and egg to flour mixture, beat with an electric mixer on low speed until moistened. Beat on medium speed 3 minutes. Stir in parmesan cheese and enough of remaining flour to make a stiff batter. Cover and let rise in a warm place until almost double in size, about 30 minutes.
Generously grease a 11/2 to 2 quart round casserole dish. Stir batter to remove bubbles. Place batter in dish. Cover and let rise to almost double in size 30-40 minutes.
Preheat oven to 350 degrees F. Bake until golden brown and sounds hollow when lightly tapped, 30-40 minutes. Remove from oven and place on rack to cool.
Although Brown isn't diabetic, she has many family members and close friends who suffer from diabetes. She says she began preparing diabetic recipes when she first had a dinner party and one of her friends attending was diabetic.
"I wanted to create a main dish that was healthy for diabetics and for the rest of us, who were also trying to eat healthy," Brown said. "So I substituted wheat flour for white flour and cottage cheese for butter, creating a very healthy, low-fat recipe."

"I know for a fact that eating healthy food helps," Brown said. "I had two friends who were diabetic, one of them ate healthy and the other who didn't eat healthy died two months ago," she added sadly.
