An event to educate the minds and the palates of Mozzarella di Bufala consumers.

The Consorzio di Tutela della Mozzarella di Bufala Campana DOP recently held a special class to educate the palates and minds of mozzarella lovers, playing an active role in countering a dangerous trend in the food industry that affects the genuine "Made in Italy" products.

Italian food and wine have always held a special position on American tables. A good showcase of their importance is the New York Fancy Food, where Italian products surely stand out, occupying the largest stall. However, the show featured also "simile-Italian" products, not made in Italy, which should be a very important feature for conscious professionals looking for authenticity. The "true-Italian" stands were packed with buyers, importers, chefs and food lovers. Does this translate into actual sales? Unfortunately, as the price of the Euro does not get any better, more and more often the real "Made in Italy" is under attack, leaving room for knock-offs and false products sold at lower prices.

Therefore, during the Fancy Food week, the Consorzio di Tutela gathered more than 150 journalists, industry leaders and food enthusiasts for a multimedia presentation followed by a tasting, to give an opportunity to learn the history, the delicate production and to sample the original product: a "gem" to the palate and to the wallet. Testimonial of the evening was food writer and celebrity Giuliano Bugialli, who described the 8-centuries old history of the mozzarella and its culinary applications. More technical details and an economic overview about the industry were presented by Vincenzo Oliviero, Director of the Consorzio di Tutela, complementing his presentation with a rousing film about the entire process, from the buffaloes gazing on the grass to the different phases of production. At the end, five individuals form the audience were "challenged" on their knowledge of buffalo mozzarella, with a blind taste-test that they successfully passed with no doubts.
