Flying Pig on Lexington Recognized by Gourmet Magazine Local Eatery One of America's Best Farm-to-Table Restaurants

The Flying Pig on Lexington, Northern Westchester's standard bearer for local and natural foods, was recognized by Gourmet magazine as one of America's Best Farm-To-Table Restaurants in the "Casual" category. The magazine's October 2007 nationwide dining guide featured restaurants, hotels, and inns whose chefs are taking locally-sourced ingredients in new and exciting directions.

The magazine's October 2007 nationwide dining guide featured restaurants, hotels, and inns whose chefs are taking locally-sourced ingredients in new and exciting directions.

As noted by Gourmet, the Flying Pig on Lexington was among the first restaurants to support the local and sustainable movement. It is best known for contemporary American cuisine, local ingredients, and California style. Executive chef Lesley Sutter mixes the casual and healthy elegance of her native California cuisine with hearty seasonal and local flavors, like creamy grits paired with glazed bacon from heirloom black pigs raised at nearby Cabbage Hill Farm and a hormone-free burger served on a rustic roll with local greens. Like the main menu, the dessert menu changes with the seasons, featuring such delights as slow roasted apples with a sparkling cider sabayon in the fall and berry tarts and desserts in the summer.

The restaurant enjoys a close relationship with nearby Cabbage Hill Farm, owned and operated by Flying Pig owners Nancy and Jerome Kohlberg. "We let the farm know which dishes are the most popular and which items are selling quickly so that it can adjust its mix of crops for the coming seasons," said Flying Pig managing partner Michael LoDolce. "Likewise, if our customers particularly enjoyed a cut of meat or a type of fish, we let Cabbage Hill and our other suppliers know so that they can replicate the feeding and care."
