The best way to prepare the lamb is the simplest: rub room temperature racks with olive oil, salt and pepper, and roast "legs up" on a rack over chunks of new potatoes and carrots, in 350 degree oven for approximately 15 minutes until medium rare. While the meat rests for ten minutes, tented under foil, prepare a simple sauce from the veal stock and pan drippings with sautéed shallots and some wine (follow any recipe for any sauce at www.debragga.com).
