Catering EXPO showcases small plates

Even in a down economy, both corporate and private events can be smashing

New York Hospitality Group, a family of companies that includes Sam's of Gedney Way, Caperberry Events, The C.V. Rich Mansion event space, and The Great American BBQ Co., hosted a catering EXPO and cocktail reception to showcase the latest trends in catering.

Peter Herrero, Jr., president of New York Hospitality Group, said that party planners are stretching their catering budget by serving small plates and "featured" items.

"Even in a down economy, both corporate and private events can be smashing," said Herrero. "We are getting an increase in requests for small plates, special features and healthy menu items that not many people are used to seeing at catered affairs."

EXPO attendees were treated to a variety of small plates, including slow-roasted barbeque pulled pork; baked golden corn pudding; tamarind boneless grilled chicken breast; grilled Idaho potato halves with garlic and herbs; and live-action seared tuna on a petite plate with wasabi flavored sesame seed tuna loin and diakon cucumber slaw, curry oil and sake sip. The featured menu item was butlered lemontinis with a sugar-rim.

A small tasting table, which Hererro said is a growing trend, along with watching chefs prepare the food, featured lobster corn dog lollipops with tarragon remoulade; seared sea scallops with crab pudding, braised chard and smoked tomato butter; and beef Carpaccio on arugula crostini.

"Guests enjoy watching food preparation; they like the action. They're looking for styled themes rather than a large buffet," he added.

The wine cellar station featured organic wines from Sonoma Valley and Piedmont Vineyards; a large reggiano cheese wheel, pastry-baked brie, gorgonzola wheel and artisanal breads.
