Acclaimed Hotel Teaches Students through Hands-On Learning.

January 2009 Biltmore Hotel (http://www.BiltmoreHotel.com) today announces The Biltmore Culinary Academy, the natural evolution of the Biltmore’s outstanding commitment to fine gastronomy. Fine dining and culinary training in Coral Gables can now be experienced at the Biltmore Hotel.

Biltmore Culinary Academy will sponsor classes for all skill levels, from curious beginners to Top Chefs with skilled chef instructors, a new state-of-the-art kitchen classroom individual attention, and hands-on participation. Click here to learn more about the Biltmore Culinary Academy.

All classes will focus on proper technique, with hands-on experience using seasonal ingredients. Student coursework includes ethnic cooking, skill-building and ingredient-based cooking classes.

“We are delighted to add an educational curriculum as an integral part of the property’s food and wine culture,” says General Manager Dennis Doucette. “The Culinary Academy further expands Biltmore’s position as a premier lifestyle destination.”

The Culinary Academy is located in the beautiful and historic Biltmore Hotel in Coral Gables, a suburb outside of Miami, Florida. The Culinary Academy showcases a custom-designed kitchen laboratory with a 12-burner stainless steel JADE range island in the 700 square foot teaching facility.

Lourdes Castro will serve as the Director of the Culinary Academy. Castro graduated from New York University with a degree in Nutrition and Food and from Columbia University with a Masters in Nutrition. She has been a full-time faculty member at the Johnson & Wales School of Culinary Arts, created Ars Magirica Cooking School in Miami, and served as a personal chef for Cristina Saralegui, Alonzo Mourning and Eddy Jones. A former associate and current active member of the James Beard Foundation, Castro is also an active member of Les Dames d’Escoffier. Her two books for Ten Speed Press, Simply Mexican and Eat, Drink, Think in Spanish will be out in 2009.

“I’m very excited to be a part of the Culinary Academy. It’s rare to find a program that allows guests to personally interact with chefs and to learn directly from them…and now it’s here at the Biltmore,” says Castro.

The Biltmore Culinary Academy will also offer an elite 3-day Master Chef Series for cuisine specific techniques in Italian and French preparations, concluding with dessert and pastry preparation.
