The tear film, thus consisting of the chemically dissimilar layers of mucin, salt water, and phytosterols, is unstable. In fact, the aqueous and oily layers, like oil and water, tend to repel each other.

“Phospholipids,” Dr. Krawitz explained, “which are long molecules with one end that resides in the salt water and the other end in the oily layer, form a ‘lock and key’ to allow these disparate layers to peacefully coexist.
