Shunning the recession, FREEBIRDS is expanding in 2010 with 26 new restaurants located in Texas, North Carolina, Oklahoma and Southern California—doubling the current number of FREEBIRDS locations to 52. Owned by Tavistock Restaurants LLC, parent company to eight concepts ranging from fast-casual to upscale, FREEBIRDS is the group's fastest growing brand.

The FREEBIRDS passion is indeed contagious—in the past three months they have opened three locations in Texas alone. The expansion will continue through 2010 with at least one FREEBIRDS World Burrito opening each month. Some months will be packed with two and three new locations opening. As part of the real estate strategy, FREEBIRDS will seek to open on or near college campuses across the nation. One such site is the University of Southern California in Los Angeles which is scheduled to open this summer.

Despite a great expansion, quality of food is still priority number one. Culinary Director / Chef Steve Byrne goes to painstaking lengths to keep the menu filled with fresh, vibrant and delicious options. "We listen to our guests and know they want exceptional quality, a variety of choices and one-to-one personalized service, so we work tirelessly to bring them just that. Guests get fed quickly, but without cutting corners or sacrificing quality in any way," says Byrne.

To that end, everyday at 6:00 am FREEBIRDS employees start roasting fresh corn, grilling chicken, chopping veggies, roasting garlic and making salsas from scratch. Burritos are available in four sizes: the Hybird, the Freebird, the Monster and the Super Monster. Guests have the option of choosing among one of four tortillas made with cayenne pepper, flour, wheat and spinach. Protein choices are chicken, steak or carnitas; vegetarians can skip the protein and tailor-make their food to suit their liking. A range of toppings, or “freebies,” include pico de gallo, tomatoes, onions, jalapeños, cilantro, lettuce, roasted peppers, roasted garlic and more. FREEBIRDS’ seven signature sauces range from mild to excruciatingly hot—a house-made specialty created with freshly chopped habanero peppers. In addition to signature burritos, FREEBIRDS is well known for “create your own” salads, burrito bowls, tacos, nachos and quesadillas. Such a wide array of offerings results in literally millions of combinations.

Sides include fresh made chips complemented with house-made guacamole, salsa or queso. For those with a sweet tooth, try a “pot brownie” or a delicious monster-size cookie. Wash it down with a beverage, which for members of the 21-and-over set might mean a cold beer.

FREEBIRDS operates a comprehensive catering program ranging from box lunches to a full service package complete with FREEBIRDS crew to roll every guest a customized burrito.

FREEBIRDS’ events team will be taking the restaurant on the road this year starting with the Houston Rodeo on March 2, 2010—just the first stop on FREEBIRDS 2010 rock n’ roll tour.
