Before individual products are certified, they have to first have to become a U.S.D.A. certified organic processor and handler, which means that inspectors come out and spend a day at the Lily Organics lab on Lily's farm, and not only do an inspection, but also do an organic audit, similar to an IRS audit, but following and documenting the organic procedures and protocol within the lab rather than the dollars!
