New Cost-Effective System For Combating Bateria In Ready-To-Eat Meats Available From A&B Ingredients

It uses the force of the vacuum to spread CytoGuard LA over the product to form an anti-microbial purge. This purge, which may contain various amounts of antimicrobial typically delivers less than 500 ppm in the finished product.

Published studies demonstrated that a 5% CytoGuard LA solution can reduce listeria counts up to 4 logs after 24 hours. After 60 days, there still was a significant log reduction compared to the control.

It uses the force of the vacuum to spread the CytoGuard LA over the product to form an anti-microbial purge. This purge, which may contain various amounts of CytoGuard LA, typically delivers less than 500 ppm in the finished product.

According to A&B Ingredients, the amount of purge needed for each product will vary depending on the amount of surface area of the product. “The premise is to use as much purge as possible, while maintaining the integrity of the packaging and the product,” said Gil Bakal, Marketing Director.

He further noted that the vacuum pulled through the packaging will distribute the purge over the surface of the meat or poultry product. Amount of solution used must be in agreement with the published USDA/ARS/ERRC research.

Bakal stated that published studies demonstrated that a 5% CytoGuard LA solution can reduce listeria counts up to 4 logs after 24 hours. After 60 days, there still was a significant log reduction compared to the control.

“The ingredient cost of using the system depends on the finished product surface area and weight. For example, according to the study, the cost required to purge a three pound ham required $0.0056 per pound of CytoGurad LA. This represents a significant reduction in cost over traditional methods,” said Bakal.

CytoGuard LA is a powerful antimicrobial based on Lauric Arginate, a derivate of Lauric Acid, L-Arginine and Ethanol, all naturally occurring substances.
