One mom per package is allowed. Extra spa treatments and Sunday brunch for additional guests are available at menu prices. (Shore Lodge offers a similar Father's Day package June 18-20 for $399 that includes a round of golf at Whitetail Club instead of a massage.)
For those who still want to pamper their moms but can't get them to McCall, Shore Lodge Executive Chef Eric Gruber is sharing his recipe for the sweet and savory British bread snack known as crumpets. Crunchy on the outside and spongy on the inside, these porous pastries are generally served hot along with butter or another topping, such as cheese, honey, poached eggs, jam, marmalade, peanut butter or syrup. Whether you're hosting a tea party or serving breakfast in bed, these scrumptious crumpets are guaranteed to please mom.
RECIPE FOR SHORE LODGE CRUMPETS
4 cups warm water (110° F)
2 oz. dry yeast
2 oz. honey
2 tsp. salt
2 tbsp. baking powder
4 cups all-purpose flour
In a small bowl, place the warm water and yeast and set aside for 5 minutes. In a large mixing bowl, mix the flour, salt and baking powder. After the yeast has bloomed, pour the water into the flour and mix well. Set bowl aside for 1 hour and let dough develop. On a hot griddle, place crumpet mold and spoon in batter. Cook for 5 minutes, flip and cook another 5 minutes. Remove mold and let cool. Makes 12-15 crumpets.

A graduate of the Scottsdale Culinary Institute who has worked at several 4-star, 4-diamond establishments, Chef Gruber has served as executive chef at Shore Lodge since September 2008. His philosophy of building menus around seasonal and regional ingredient-driven cuisine is showcased most notably at The Narrows, the resort's fine-dining restaurant and lounge. Locally sourced products like grass-fed lamb from Hailey, Idaho, with mountain huckleberries picked fresh in McCall are highlights of the menu.
