Graduation is a time for new beginnings, and a perfect opportunity to honor all the people who have shared in your graduate’s accomplishments. There’s no better way to gather them all together than an open house, especially these days when families are seeking ways to save time and cut costs amid all the pomp and circumstance.

As a result, Land O’Lakes is serving up some terrific tips to ensure a successful open house for your graduate:

  •     Organize ahead of time so you’ll be relaxed at the party. Identify recipes that can be prepared ahead. Itemize everything needed to minimize shopping trips.
  •     Throw a party for a group of graduates who have friends in common. This way, everyone can save and enjoy a joyous celebration together.
  •     Consider your serving arrangements. Guests should have easy access to food and drink without reaching across others or crowding. Separating dessert and beverage stations helps with the flow and creates different areas for guests to gather. Try placing wrapped utensils at the end of the buffet to avoid having guests juggle these while serving themselves.
  •     Make decorations personal and fun, not expensive. Pick flowers from your own garden or buy at a farmers market. Decorate tables with photos or memorabilia that you might use to honor the graduate or the guests.
  •     Limit expensive foods. If you’re preparing a full buffet, keep in mind that most people plan for too much food. Limit foods that are pricey and stock up on non-perishable items that you can pull out if you run short.
  •     Prepare your food tapas style. In other words, prepare small dishes for guests to munch on throughout the day or evening. That way, guests can sample a bit of everything.
  •     Ask family and friends to bring a dish to pass. Most everyone is happy to contribute their own creations to your event.
  •     This is a day you'll want to treasure, so take plenty of photos. Place several disposable cameras around and encourage guests to take snapshots. Have a tape recorder or video camera handy for guests to share a special story.

Yield: 2 dozen cookies

Cookie Ingredients:

2 LAND O LAKES® All-Natural Egg whites
1 tablespoon fresh lime or lemon juice
½ cup sugar
½ cup all-purpose flour
1/3 cup LAND O LAKES® Butter, melted
1 pound vanilla-flavored candy coating (almond bark)

Decoration Ingredients:

Narrow ribbon in school colors

Heat oven to 350°F. Lightly spray cookie sheets with no-stick cooking spray. Generously butter the handle of wooden spoon. Set aside.

Combine egg whites and lime juice in large bowl. Beat at high speed until foamy. Continue beating, gradually adding sugar, until glossy and stiff peaks form. Gently stir in flour and butter.

Spoon 2 teaspoon batter onto prepared cookie sheet; evenly spread batter to 3-inch circle. Repeat with remaining batter, placing only 3 cookies on each cookie sheet. (Do not reuse cookie sheets without first washing and reapplying no-stick cooking spray.)

Bake for 5 to 8 minutes or until edges just begin to brown. Immediately shape cookies by wrapping around buttered handle of wooden spoon. Gently remove from cookie sheet; cool completely.

Melt candy coating in 1-quart saucepan over low heat, stirring occasionally, until melted (3 to 4 minutes). Carefully dip each end of cookie in coating. Gently shake cookie to remove excess coating. (Cookies are very fragile.) Place on waxed paper until coating is set (15 minutes). Repeat with remaining cookies and coating.

Insert 1 fortune inside each cookie. Tie ribbons in school colors around center of each cookie.

Recipe Tips

  •     If using dark cookie sheet, line with aluminum foil; spray with no-stick cooking spray.
  •     When cookies are baked, immediately loosen them from the cookie sheet with a thin metal spatula. Working quickly, place buttered handle of wooden spoon on one side of cookie; carefully roll up. Keep bowl of spoon over edge of counter to make rolling easier. Slide cookie off spoon handle onto cooling rack. If cookies harden before rolling them, put cookies back into the oven until they soften (about 1 minute).
  •     Microwave vanilla candy coating on HIGH for 60 seconds. Stir; continue microwaving until candy coating is melted (30 to 60 seconds). Dip each end of cookie in coating.
