Strudel has sustained its popularity for centuries mainly because it is a traditional, yet transformable concept. Originally an Austrian pastry named for its resemblance to a whirlpool – strudel literally means “whirlpool” in German – strudels were prepared with dough that was very elastic with flour, egg, butter, water and no additional sugar. The dough was rolled out and stretched by hand until it was very thin, so thin that one could read through it.*

A simple, yet effective technique to incorporate even more texture and flavor into a strudel, whether savory or sweet, is to layer the phyllo dough with ground nuts, cheese, sugar or cocoa powder. This savory dish, Phyllo Chicken Tagine, highlights almonds on the outside layer of phyllo for added crunch and a more unique presentation. Another savory example, Autumn Appetizer Strudel, features mushrooms, apples, brandy and thyme to create a tasty combination of flavors.

Dessert strudels have also evolved; this Cherry Ricotta Strudel is an example of using liquor to increase the recipe’s flavor by marinating the cherries in Cointreau to give them a bold, orange flavor.
