Middle Bay Country Club has engaged Jack Clarke as its Executive Chef.
Chef Jack, a 1983 graduate of the Culinary Institute of America, has more than 30 years’ experience at a wide range of first-class hotels, restaurants, exclusive country clubs, executive and off-premise catering firms. A native Long Islander who grew up on the South Shore, Chef Jack was introduced to a wide variety of fish and seafood at an early age, and his love for Long Island’s regional cuisine can be seen and tasted in his unique cooking style.

Prior to joining Middle Bay, Chef Jack was Executive Chef at Fresh Meadows Country Club for seven years. He served as Muttontown’s Executive Sous Chef for three years and as Event Chef for Lawrence Scott Events for ten years. Chef Jack also served as Executive Chef for Aramark Dining Services, which provided corporate food services for Goldman Sachs’ New York headquarters, and as Sous Chef for Il Tuscano Restaurant in Douglaston, New York.
