Healthy eating guidelines recommend that people eat at least 5 servings (2 ½ cups) of vegetables each day. Yet according to surveys by the Centers for Disease Control and Prevention, 74% of Americans eat less than 3 servings of vegetables a day. The story is similar in Australia, where the last National Nutrition Survey found that only 15.4% of men and 22% of women eat 4 or more vegetable servings each day.
