Gourmet meat purveyor Lobel’s has expanded its line of specialty foods with the introduction of three new varieties of bacon, including its first-ever sliced bacon, all available nationally through the website at http://www.lobels.com. The new selections include Fruitwood Smoked Uncured Bacon, Peppered Bacon and Cottage Bacon, which brings their line of bacon offerings to five.

Lobel’s Fruitwood Smoked Uncured Bacon ($12.98 per 12-ounce package) comes from hand-trimmed pork bellies that are double smoked with apple and cherry woods to impart a delicately sweet, smoky flavor. Thick-sliced and shingle-packed, the farmhouse-style Fruitwood Smoked Uncured Bacon is lower in sodium than many cured bacons yet still boasts abundant flavor.

Lobel’s Peppered Bacon ($12.98 per 16-ounce package) is maple cured, rolled in cracked black Tellicherry pepper and smoked with apple wood. A thick-sliced bacon, it offers a classic contrast in flavors between a peppery bite and sweet smokiness.

Similar to Canadian bacon, Lobel’s Cottage Bacon ($11.98 per 12-ounce package) comes from the center of a marble-laced pork butt, which is then cured and smoked for an intense flavor and a unique texture among bacons. The round, thick-sliced Cottage Bacon has less fat than traditional strip bacon and richer flavor than Canadian bacon.

Lobel’s new bacons come from pigs raised in the certified humane environments of small, family farms in eastern Canada.
