Swiss Colony Shares a Classic Recipe - Christmas Spice Cookies

These cookies taste like Christmas should taste.

The Swiss Colony has come a long way since Ray Kubly sold his first order of swiss cheese in 1926. Now, 85 years later, the Wisconsin-based company known for its cheeses, meats and novelty bakery items, is releasing a classic Christmas cookie recipe from its archives.

“Gingerbread is synonymous with Christmas and we’re excited to release this beloved recipe that’s part of our company heritage,” says Becky Henke, vice president of marketing at The Swiss Colony.

This version of the “Christmas Spice Cookie” recipe was created by one of Swiss Colony’s German Konditors (master pastry chef), Ernst Posner around 1996. In fact, gingerbread has been a tradition at the company for more than 50 years. Current gingerbread holiday products include the hand-decorated Gingerbread House and Gingerbread Spice Cookies. Both are top sellers in the company’s Christmas catalog, online at http://www.swisscolony.com and in the new Google catalog app for tablets.

“These cookies taste like Christmas should taste,” says Gwen Penniston, Swiss Colony’s bakery technician. “You can’t beat the aroma while these are baking! You’ll see a lot of happy faces when you serve them warm with a glass of milk.”

Swiss Colony’s Christmas Spice Cookies

½ cup butter
½ cup brown sugar
¼ cup molasses
¼ cup honey
1 tablespoon vanilla
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
¼ teaspoon allspice
¼ teaspoon ground cloves
2 cups sifted flour
2 large egg whites

Cream butter and sugar until smooth. Stir in molasses, honey and vanilla. Combine all the dry ingredients. Add the sugar mixture to the dry ingredients; add the egg whites. Blend until smooth. Cover and refrigerate for 1 hour. Heat oven to 350 degrees.

Roll dough on a lightly floured surface, cut into desired shapes. Bake for 8 to 10 minutes, until firm and lightly browned. Cool on wire racks. Makes approximately 24 cookies.
