Winterhalter takes on Premier League warewashing at Wolves

“We didn’t have any problems with the WKT-1200,” explain Fidel Ebanks, catering manager. “But it simply couldn’t cope with the increased load.”

Molineux Stadium, home of Premier League Football Club Wolverhampton Wanderers FC, has a capacity of about 29,300. It’s a bustling place with a booming catering operation. The 2010-11 season has seen an increase in matchday catering, with anything up to 1500 covers to be served and cleared away.

To cope with demand Wolves decided to upgrade their warewashing operation. The old Winterhalter machine had given many years of trusty service but as the catering business expanded the warewashing throughput needed to keep pace.

“We didn’t have any problems with the WKT-1200,” explain Fidel Ebanks, catering manager. “But it simply couldn’t cope with the increased load.”

After investigating models from other manufacturers Wolves decided to stick with Winterhalter and chose the MTR 2MM rack machine. With a capacity of 115 racks per hour the new machine has the potential to deal with an even greater demand.

“Winterhalter offered us the best overall service back-up,” says Fidel. “We had to have a machine we could rely on.”

The MTR is used non-stop from 10am to 7pm: for pre-match meals comprising a starter, main course and dessert, plus teas and coffees at half-time and then post-match refreshments for up to 800 covers. It also copes with Wolves’ ‘pots and pans’ and, on non-match days, it deals with all the cutlery and crockery from the main function room.

“The new machine is much bigger and quicker than the old one,” says Fidel. “It’s far more efficient as well. We used to have five operators on match days working flat out and now we manage easily with four, freeing up a member of staff for other duties.”

The touch screen console on the MTR simplifies operation considerably and Fidel found that the staff didn’t need much training to get the hang of the new machine.

The MTR multi-tank dishwasher is fitted with Winterhalter’s MediaMat filtration system to keep the wash water cleaner for longer, thus reducing water, power and detergent consumption throughout the operating cycle. It has an automatic cleaning programme that can be set in motion at the end of the day.

The latest Winterhalter energy saving technology in the MTR includes contents-controlled zone activation that prevents empty runs and unnecessary heat and noise. Its energy-saving heat exchangers make use of the heat from waste steam and improves the working environment by reducing humidity in the wash area.

“Now the season is well underway we have found the MTR has streamlined our operation and means that we can be confident of turning around the cutlery and crockery even on the busiest of match days,” says Fidel.
