Enforex Spanish Schools, a major study abroad organization, has introduced a program where people learn Spanish in Mexico and receive some Mexican cooking courses. The Spanish and Cooking course is available at Enforex's Mexico Spanish school in Guanajuato. It is a language immersion program that integrates learning how to cook Mexican cuisine with a standard Spanish language course and a Mexican culture course. The program takes a minimum of 1 week and consists of 20 hours of Spanish training, 5 hours for culture and 2 hours of culinary lessons a week.
The Spanish and Cooking program starts every Monday and is available all year round. Participants of all language levels and all ages are accepted into the course. The maximum class size for the Spanish language training is 10 students and 16 students for the cooking sessions. The language classes start in the morning together with the culture classes and the cooking classes begin in the afternoon. The cooking classes orient students to Mexican gastronomy and are divided into two one-hour classes a week. This would include learning the basic techniques used and the ingredients found in typical Mexican cuisine. Cooking techniques students can learn from the program include making masa (a corn-based dough for tortillas), tamales and other corn-based dishes) and the use of various herbs and spices such as chili, oregano, cilantro, cinnamon, cocoa, and epazote.

Some of the recipes that students learn through the program enjoy worldwide fame, an example of which is the taco. Students will learn what a real Mexican taco is made out of. Students also will discover other recipes such as tortillas, burritos, chile rellenos, enchiladas, carnitas, balbacoas and savory dishes that utilize a sauce called mole. Part of the experience is utilizing acquired skills in Spanish training to purchase items in the local market and neighborhood stores.
