Paolo Busi, East Vail resident and Executive Chef of Alpine Tavern, created the dishes in response to growing interest in lighter, often vegetarian dishes. Chef Paolo’s expertise in European, South East Asian and Indian cuisines is perfect for the creation of these new, unique dining pleasures.
The new line-up includes Lamb Shank immersed in a delicate, light coconut curry sauce. This is Colorado lamb, range fed, very lean, and presented in a gentle sauce hinting of Thailand’s aromatic cuisine.
For the seafood lover, Chef Paolo presents Prawns Sambuca – prawns presented on puff pastry complimented by a white wine Sambuca sauce. Sambuca contains essential oils obtained from star anise and elder flowers with historical ties to Greece, middle- eastern, and Italian cuisines. Prawns sambuca is a truly unique dining experience in the Vail Valley.
For the vegetarian, the Alpine tavern introduces Eggplant Parmigiana from the hills of Cerbaia in the heart of the Chianti region of Italy. The preparation is simple, country style Italian, where the major ingredient is love! This is Mama’s recipe from Paolo’s childhood in Tuscany.
