Paolo Busi, East Vail resident and Executive Chef of Alpine Tavern, has created the new European dining experiences:The Thursday Temptation for January is Lamb Shank- a moist, lean meat, immersed in a delicate, light coconut curry sauce. This is Colorado lamb, range fed, very lean, and presented in a gentle sauce hinting of Thailand’s aromatic cuisine.
Scott Kneeland, Alpine Tavern sommelier, recommends pairing the Lamb Shank with Rombauer Chardonnay. This beautiful Napa wine has a golden yellow color with a pale hue. Seductive aromas of peach, melon, and citrus are balanced with honeysuckle and vanilla. On the palate, flavors of pears, peaches and melons are backed with lively acidity. A nice touch of vanilla-scented oak provides an added flavor dimension. The creamy palate has a lingering finish of melon and citrus fruit with a satisfying buttery complexity
