Paolo Busi, East Vail resident and Executive Chef of Alpine Tavern, has created a new dish to add to the already outstanding European dining experience. The Friday night special Osso Bucco is always a sell-out. This dish is prepared in a Northern Italian style with carrots, onion, celery, garlic, parsley, lemon zest, and, of course, love! The sauce is thick, chunky, and will satisfy the hungry gourmet. It is a great dish to prepare the guest for a long day of skiing in Vail.
It is recommended pairing this hearty meal with Antica “ Antinori Family Estate”. This delightful cabernet releases floral berry and currant aromas, which carry over to the palate. Tight and focused, this wine shows early signs of complexity, offering fine depth and length. A 100% Estate Grown Cabernet Sauvignon from Atlas Peak's 24-acre Townsend Vineyard, planted at an elevation of 1460 feet in the volcanic soil series Perkins Gravelly Loam, and its aged in new French oak barrels. The Cabernet Sauvignon offers pure, ripe Cabernet Sauvignon fruit centered on currant and unfolding to blackberry and black cherry flavors. The palate offers full-bodied richness and power, with a persistent display of freshness in the smooth and lingering finish.
