In honor of Valentine’s Day, SHOR American Seafood Grill at the Hyatt Regency Clearwater Beach Resort and Spa is featuring a special table d’hôte menu. The four-course prix fixe offering was developed by Executive Chef Richard Preston in collaboration with his culinary team.
SHOR’s Valentine’s Day menu features a soup course and salad course, along with a choice of innovative entrees and decadent desserts. Guests may choose from a wild mushroom velouté or traditional lobster bisque, while the salad options include mesclun greens with toasted walnuts and sun-dried cherry or organic baby Savoy spinach with roasted red pear and caramelized onion.
For the main course, SHOR offers a selection of four specialty dishes:
•Slow-Roasted 1855 Beef Tenderloin with aged white cheddar potato gratin and asparagus
•Prosciutto-Wrapped Chicken Supreme with triple-cream brie polenta and baby zucchini
•Gigha Island Halibut with roasted sweet corn and pancetta risotto and sautéed mustard greens
- Fennel-Pollen-Crusted Ahi Tuna with purple-top turnip purée and charred broccolini
Dessert presents a delicious conundrum: baked Alaska flambé with coconut gelato and raspberry flaming Italian meringue, or milk chocolate pot de crème with cranberry pistachio biscotti. Complementary Norman Love chocolate truffles add a sweet finish to the meal.
While the special Valentine’s Day prix fixe menu is only available on February 14, diners will find an array of equally enticing items in SHOR’s seasonally updated menus. The popular Clearwater Beach restaurant serves breakfast, lunch and dinner seven days a week, and presents a variety of specials and events throughout the year. Current offers include Prime Rib Monday and Blue Wednesdays, featuring $3 Blue Moon beer and $1 Blue Point Oysters.
Executive Chef Richard Preston and his team – including Executive Sous Chef James Morin and Chef Brent Hockenberry – have gained renown for their creative Coastal American cuisine and use of fresh, organic and locally sourced ingredients. In fact, SHOR’s innovative menu, expertly prepared dishes and waterfront views have earned numerous honors and distinctions, including the AAA/CAA Three Diamond Award.
Preston began his career at age 15, serving as a dishwasher in a dinner theater in Calgary, Canada. Following his culinary education, he quickly worked his way up to sous chef at the Hyatt Regency Calgary. He joined Hyatt’s SHOR restaurant in Clearwater Beach in 2010, and is approaching his tenth year with Hyatt.
“Developing SHOR’s new menu was a collaborative effort shared by the entire team,” noted Preston. “It is a ‘best of’ compilation featuring what we have found to be the restaurant’s best sellers – classic favorites that are simply, yet elegantly, prepared. We carefully select all products, choosing only the freshest meats and seafood, and we add our own unique twist to every item on the menu.
