Living Light Culinary Institute founder and director Cherie Soria is leading a tour of the Northwest, with a detour to Toronto to be a presenter at the Total Health Show on April 20-22. Soria and her staff will teach the school’s introductory course in gourmet raw vegan cuisine, FUNdamentals of Raw Living Foods, in four cities: Vancouver, B.C. on April 14, Toronto, Ontario on April 28, Seattle, Washington on May 5, and Portland, Oregon on May 12. The one-day intensive course offers a wide variety of easy-to-prepare raw vegan recipes. More than a dozen culinary demos will feature appetizers, fruit smoothies, soups, green juices, salad dressings, entrées, pâtés, sandwich wraps, nut milks, non-dairy cheeses, crackers, and other dehydrated snacks. Tuition is $375, and includes a full buffet lunch of organic raw vegan foods.

More than a dozen culinary demos will feature appetizers, fruit smoothies, soups, green juices, salad dressings, entrées, pâtés, sandwich wraps, nut milks, non-dairy cheeses, crackers, and other dehydrated snacks. Tuition is $375, and includes a full buffet lunch of organic raw vegan foods and samples of nearly all of the demo recipes. Thousands of people from over 50 countries have taken Fundamentals of Raw Living Foods since it was first offered by the school in 1998.

“My goal since the beginning has been to spread the benefits of gourmet raw vegan cuisine around the globe by training teachers and chefs to inspire others,” says Soria. “This one-day intensive introductory course has literally transformed the lives of thousands of people.”

Attendees will learn sprouting and kitchen gardening, and how to make fermented foods like “live” sauerkraut. Talks offered during the class include “The Secret of Great Dressings, Marinades, and Sauces,” and “Quick and Easy Meal Prep.” Participants also learn how to create simple menus using essential equipment and supplies used in a raw food kitchen, and “Introduction to Basic Knife Skills” teaches students how to use the right kitchen knife for every task.

Soria will also give talks and do book signings in each of the four cities. At the Total Health event, her lectures will include “Stay Young Longer”, which draws on her personal experience and research on aging, and “Feast, Lose Weight, Gain Energy with Raw Foods,” which illustrates why the raw vegan diet is now recognized as one of the top programs for weight loss, and how to maintain ideal weight without counting calories on a high-raw diet. She will also conduct a workshop on “Raw Foods for Health, Beauty, and Longevity,” which will cover skin and body care, foods to enjoy or avoid, and tips for reducing stress, increasing confidence, and achieving personal goals. Simple recipes for busy people will be demonstrated, including cookies, crackers, chips, dips, and wraps.

Living Light Culinary Institute offers a comprehensive professional curriculum in gourmet raw vegan food preparation. Students learn a progressively complex set of culinary skills, from mastering knife techniques and setting up a healthy kitchen, to charting a menu, catering an event, and learning how to do professional culinary demos. Recipe development, pastry arts, and raw nutritional science are also included in the school curriculum. FUNdamentals of Raw Living Foods is a course prerequisite for all of the school’s certification programs.

Cherie Soria, author of several books, including the classic Angel Foods: Healthy Recipes for Heavenly Bodies, and Raw Food Revolution Diet, is founder and director of Living Light Culinary Institute in Fort Bragg, California, and has been teaching gourmet raw vegan cuisine since 1998 and vegetarian culinary arts for more than 40 years.
