Now for sale at all Whole Foods Markets stores across the Bay Area and Napa, Polska Foods® is offering San Francisco Bay Area customers the first, authentic Polish pierogi made with organic ingredients. Their home-style pierogi is stuffed with fresh vegetable fillings that are slowly sautéed and then blended with fresh herbs and creamy farmer's cheese. The savory fillings are then wrapped in a thin, delicate pasta shell.
For those of you who have never had a Pierogi, you can think of it in terms of a delicate dumpling which is boiled and served hot. They are traditionally topped with caramelized onions, butter, or dipped in sour cream. They can be enjoyed as an appetizer, a main meal, or paired with almost any meat, salad, or vegetable dish.
For authentic pierogi, flavor and texture is essential; however, the founders, Bridget & Tomek Piszczek, wanted a product that was also healthy. They were adamant about adding no artificial flavorings, no MSG, no additives, no preservatives, no GMO ingredients, no dairy with growth hormones, and keeping away from most ingredients that go along with many packaged foods today. The end result was an authentic pierogi that tastes and nourishes like home cooking--the kind Mr. Piszczek grew up with on his family farm in Lubiechowa, Poland.
"When I came to the United States, I was surprised at how different the pierogi tasted from what I was use to in Poland. We use a much thinner dough and it should melt in your mouth. Every ingredient is important, from the quality of the vegetables to the freshness of the cheese," said Tomek Piszczek, Founder of Polska Foods, Inc.
The company currently sells four pierogi flavors: Potato & Farmer's Cheese pierogi made with organic whole wheat or white dough, Mushroom & Cabbage with sauerkraut and caraway seeds, and Spinach & Feta in an organic whole wheat dough. Each product took a year of research to find the local, organic farmers they could trust and then to test the recipe with each final ingredient. Keeping to the homemade recipes from Tomek's grandmother in Poland, they found artisan farmer's cheese for their potato cheese pierogi and real sauerkraut without added vinegar. The only change to the original recipes were a few seasoning and spices to provide that true "California Fusion" flavor that make California restaurants some of the best in the world.
"As a California native, I never had pierogi before, but I am absolutely addicted to Polska Foods' pierogi. My 9 year old son loves the potato cheese the best and makes sure I get a few packages every time we shop at Whole Foods.
