The New Website ChefSteps.com Teaches the Art and Science of Cooking

The first online-based course on sous vide cooking has been launched as a beta version and is supported by PolyScience.

ChefSteps will provide answers to many curious chefs that like to explore sous vide cooking and the combination of culinary arts and science.

PolyScience, the company that pioneered and popularized sous vide cooking in the world’s best kitchens is partnering with Delve Kitchen LLC and its online-based culinary school http://www.ChefSteps.com to offer a new approach to learning the art and science of cooking.

ChefSteps by Delve Kitchen is the new project by Chris Young, Ryan Matthew Smith and Grant Crilly, the co-creators of the six-volume work Modernist Cuisine: The Art and Science of Cooking. The world-renowned team teaches techniques of traditional and modernist cooking through practical, hands-on demonstrations with detailed step-by-step explanations.

Chris Young epxlains, ”Once Modernist Cuisine was published, we thought: What next? A lot of people assumed we would quickly get to work on another book, but for us the answer was to build our own experimental kitchen (and photo studio) where we could keep doing what we love to do, which is explore what’s possible in a kitchen where the art and science of cooking come together. We wanted to do something more collaborative and teach curious cooks the how’s and why’s of cooking.”

The first ChefSteps course is on sous vide cooking and has been launched on the internet as a beta version and is powered by PolyScience. “ChefSteps will provide answers to many curious chefs that like to explore sous vide cooking and the combination of culinary arts and science – whether they are home chefs or professionals," says Christoph Milz, marketing manager at PolyScience.

Next to sous vide cooking technology, PolyScience is also known for its technology to perform techniques like flash-freezing, cold-smoking, low temperature distillation, sonication, and vacuum-cooking techniques. These and other techniques will eventually be part of the online curriculum on the ChefSteps website.
