“I was encouraged to write the first instruction book on making lefse after many people approached me stating they would like to learn to make lefse,” author Darlene Sabo Ellefson says. “I could have made a video but realized a book would be easier to follow and I could reach more people in a book form.” Six years ago she did just that. Having sold out that book, Ellefson now offers her second edition in, “Step-by-Step Illustrated Instructions and Recipes for Making Lefse” (published by AuthorHouse).
Lefse is a traditional Scandinavian treat made primarily of potatoes and cooked on a griddle. With her new step-by-step illustrated instructional book, she now brings the Scandinavian delicacy to readers’ kitchens.
Besides illustrated instructions, this book contains four recipes: two using potatoes, one using mashed potatoes from a previous meal, and still another using potato flakes, which saves at-home cooks the time and toil of preparing the potatoes to a riced consistency.

Darlene Sabo Ellefson has been a lefse-maker for over 50 years, having begun after receiving a lefse griddle when she married. In taking part in a national bake-off, she created the delicacy in front of an open audience where viewers were permitted to ask the contestants questions.
