The Rum University Announces a New Hands-on Course for 2013: “The Art of Rum Making”

Established in 2004, The Rum University’s mission is to educate consumers and rum producers about all facets of the wonderful sugarcane spirit known as Rum. For almost a decade, the University has held in-person classes and has offered on-line material on topics including fermentation, distillation, aging and blending.

This course represents almost two decades of research and is a valuable collection of hard-learned lessons

The Rum University’s newest hands-on course, “The Art of Rum Making” will be offered worldwide starting January 2013. The multi-day course is designed to help industry neophytes gain a better understanding of the theory and techniques involved in producing rum commercially. The 11 knowledge-filled lessons take the student through the following topics:

Lesson 1 - Introduction to Fermentation
Lesson 2 - Yeast Selection, Storage and Propagation
Lesson 3 - Preventing and Resolving Fermentation Problems
Lesson 4 - Introduction to Distillation
Lesson 5 - Distilling with the Goal in Mind
Lesson 6 - Distillates Primer: Heads, Tails and Everything in Between
Lesson 7 - Introduction to Aging
Lesson 8 - Achieving Consistency
Lesson 9 - Rum Lab: Using the Tools of the Trade
Lesson 10 - Selling Rum in the USA
Lesson 11 - Selling Rum Outside the USA

“This course represents almost two decades of research and is a valuable collection of hard-learned lessons” says Luis Ayala, University Founder and head of Curriculum Development. He adds “anyone currently distilling or who is planning to distill rum should really consider attending.” Luis Ayala has worked with rum distilleries around the world, from small artisan companies to large-scale, multinational enterprises. The classes will be conducted in North America, South America and in selected European countries.
