A new video entitled “World’s Best Tamales Gluten Free Vegan” is available on the Alternative Cook Channel on You Tube to show step-by-step how to make them. Tamales are a traditional holiday food and now those with Celiac disease, gluten intolerance and Autism can enjoy this festive food.

Jean Duane, Alternative Cook shows how to make the world’s best tamales featuring the ‘three sister’ filling of pintos, squash and sweet potatoes which combine to make a lovely taste and mouth-feel. She demonstrates how to make (gluten-free) masa harina dough. Step-by-step, Ms. Duane presents how to soak the husks, press the dough into the husk, fill, roll, tie and steam the tamales. Then she demonstrates how to make a vegetable sauce to compliment the tamales. This recipe makes about 24 tamales, which can be served after steaming one hour, or wrapped in an airtight container and frozen for a quick meal. Just microwave 2-3 minutes and top with salsa.

Tamales are a holiday tradition from Latin America and given as gifts. Making them is a fun family activity – someone can make the dough, someone else the filling(s) and everyone can take part in rolling and eating them. “These tamales are easy to make and filled with mouth-watering flavor”, says Ms. Duane.
