- Since consumers are more interested in where food comes from, restaurants will focus on American regionalism.
- With menu-labeling laws expected to come into play in 2012, many chains have already developed more healthful options that aim to appeal to increasingly health-conscious consumers. Mintel surveys revealed that 28% of consumers want more healthful menu options, and 33% said they will order menu items that are more healthful overall and have fewer calories.
“It’s exciting to see that our menu items and practices are considered ‘on trend’ this year. However, these efforts are actually part of our long-standing culinary philosophy rather than an attempt to follow industry trends,” explained Executive Chef Richard Preston of SHOR American Seafood Grill at the Hyatt Regency Clearwater Beach. “Ever since we first opened, it has been our aim to offer customers fresh, healthy, organic and locally sourced food with numerous customization options.
