The healthy, locally sourced and customizable dishes featured at SHOR American Seafood Grill in Clearwater Beach are right on trend for 2012, according to an industry forecast recently published in Nation’s Restaurant News. The article summarized the findings of Chicago-based market research firm Mintel and stated, “Healthful menu items, local foods and customization will be key sales drivers for restaurant operators in 2012.”(1)

Mintel’s restaurant industry predictions were based on menu and operations trends as well as survey responses. The following excerpts from the Nation’s Restaurant News article(2) highlight the top restaurant trends this year:

  • Customization will continue to drive consumer satisfaction, as guests are offered more opportunity to control their selections. … With an emphasis on fresh, unprocessed food, restaurants will offer and promote more “handmade-just-for-you” items.
  • Since consumers are more interested in where food comes from, restaurants will focus on American regionalism.
  • With menu-labeling laws expected to come into play in 2012, many chains have already developed more healthful options that aim to appeal to increasingly health-conscious consumers. Mintel surveys revealed that 28% of consumers want more healthful menu options, and 33% said they will order menu items that are more healthful overall and have fewer calories.

“It’s exciting to see that our menu items and practices are considered ‘on trend’ this year. However, these efforts are actually part of our long-standing culinary philosophy rather than an attempt to follow industry trends,” explained Executive Chef Richard Preston of SHOR American Seafood Grill at the Hyatt Regency Clearwater Beach. “Ever since we first opened, it has been our aim to offer customers fresh, healthy, organic and locally sourced food with numerous customization options. The Clearwater Beach restaurant is renowned for its fresh seafood and creative Coastal American cuisine. While customers can choose from rich toppings like the creamy Béarnaise and sweet Mango Butter Sauce, SHOR also offers lower-fat alternatives like the Tropical Salsa.

For example, the Florida Green Salad boasts ingredients such as avocado, hearts of palm and Florida oranges, while the dessert menu features a Plant City Strawberry Shortcake with succulent berries picked by local farmers.
