With only one month left to legally sell foie gras in the state of California, Mirepoix USA’s “Foie Gras Tasting” reception may be one of the last bay area events showcasing the soon-to-be-banned delicacy.
Foie gras appetizers such as foie gras ice cream on ginger snaps with aged balsamic vinegar, white and dark chocolate foie gras truffles, foie gras cured with lavender sea salt, and seared foie gras sandwich with duck bacon, spicy tomato jam and pea shoots will be served at Mirepoix USA’s special tasting event. Premium wines that pair well with foie gras will be served.
While mingling with other luxury food connoisseurs, event attendees will also be served Black River Caviar, a premium caviar that is "wild raised" in Uruguay, using sophisticated farming techniques that almost exactly mimic sturgeon's natural living environment. Black River Caviar has been praised by experts, including a number of renowned chefs and food critics.

In addition to tasting six foie gras appetizers prepared by Pine, those attending this event can leave with a supply of foie gras that can be stored in the freezer for up to two years. Hudson Valley Foie Gras products will be available for purchase at the event while supplies last.

California State Senate Bill No. 1520 (SB 1520), introduced in 2004, prohibits force feeding birds and prohibits the sale of any product “if it is the result of force feeding a bird for the purpose of enlarging the bird’s liver beyond normal size”. Beginning July 1, 2012, it will be illegal to produce or sell duck or goose foie gras in the state of California.
Mirepoix USA, formerly based in California, is now operating from Reno, Nevada in order to comply with California State Senate Bill No. 1520.
